A sampling of our dry corn products. One pound each of both fine and coarse corn meal, yellow popcorn, and parching corn. One of our lesser known products, the parching corn is our sweet corn allowed to dry on the plant in the same way as field corn, and then harvested as a dry grain. Tossed in a well warmed sauté pan with a bit of oil, and cooked much like popcorn, the kernels puff back up and become crispy, like a more tender corn nut. Tossed hot out of the pan, with dry seasonings of your choice, parching corn makes a delightful addition to salads, soups and nut mixes. Be sure to store the corn meals in the freezer until use.
